Manolo’s passion for food began when he was a little boy cooking side by side with his beloved grandmother Angelita. He learned about his family’s unique culinary traditions in her kitchen. Years late, while working in the IT industry in Silicon Valley, cooking gave him a sense of comfort even when he was far away from home. Finally, he realized his dream of sharing Mexican food and cultural heritage with the Greater Milwaukee area when LOS PAISA opened its doors in Bayside, Wisconsin, in 2005. He opened Tacos Y Tequila Bar in 2017 and launched the MILWALKE TACO MOBILE concept in 2020.
Manolo enjoys creating new recipes that are a surprising fusion of culinary traditions from several cultures. He is passionate about tequila and mezcal.
